One Minute Homemade Mayo

I think mayo might be my favorite condiment. It is so versatile, and you can do a million things with it.
Mayo gets a bad rap, but the basic ingredients in mayo are not bad for you. Unfortunately, most store bought mayonnaise is unhealthy because it contains inflammatory vegetable/seed oils like soybean oil, preservatives, artificial ingredients and added sugar. There are a couple clean mayo options out there, but it can get pricey to keep those in stock all the time. It is much more budget friendly to make your own.
Homemade mayo is quick and easy, and once you make it one time, you'll never go back to store bought. The key to good homemade mayo is to use an immersion blender. I've tried making it in the regular blender, and I have also tried to mix it by hand, but I never could get it to emulsify until I used an immersion blender. The one I use is linked here, and it is under $20. We use it all the time!
You really only need two ingredients to make mayo: oil and egg. However, I like to put a few pinches of salt and a squeeze of lemon juice in mine for added flavor. Plus, the lemon juice acts as a natural preservative, so that's a bonus. This recipe makes about 2 cups of mayo, and it will stay good for 2 weeks in the refrigerator.
Ingredients:
1 cup (8oz) avocado oil or light tasting olive oil
1 egg, room temperature*
3-4 pinches of salt (pink or sea salt)
Juice from 1/2 lemon (about 1tbsp)
Directions:
Pour the avocado oil into a wide mouth jar or container that your immersion blender will fit down into (I love using the 16oz wide mouth Ball jars because the measurements are right there on the side of the jar and you can store it in the same container you use to make it.)
Crack egg into the jar
Add salt and lemon juice
Lower your immersion blender down into the jar until the blade is directly over your egg yolk and touching the bottom of the jar.
Turn it on and slowly lift the blender as the mixture starts to emulsify.
Move blender up and down a couple times to ensure everything is mixed together well, and you've got yourself a jar of thick and creamy homemade mayo without all the junky ingredients.
