Healthy Homemade Marshmallows

These have become a sweet little holiday tradition in our house. I feel great about giving them to my kids because, unlike store bought marshmallows, these are made with simple, real food ingredients that actually support the gut and immune system.


I was always intimidated by the thought of homemade marshmallows, but these are insanely easy to make and delicious. They melt right into your hot cocoa and make it so creamy and delightful.

Give these a try, and I promise you'll never buy marshmallows again!


INGREDIENTS:

  • 1 cup warm filtered water

  • 1/4 cup grassfed beef gelatin

  • 1 cup pure maple syrup

  • 2 tsp pure vanilla extract


DIRECTIONS:

  • Grease a 9x13 baking dish and set aside. I use coconut oil or avocado oil spray.

  • In the bowl of a stand mixer with the whisk attachment, add 1/2 cup warm water and gelatin, and slightly mix to combine. Set aside.

  • In a medium saucepan on the stove, add 1/2 cup water and maple syrup. Slowly bring the mixture to a boil and let simmer for about 8 minutes, stirring constantly.

  • Turn the stand mixer on low, and slowly pour the contents of the saucepan into the bowl of the stand mixer and mix until everything is combined.

  • Once it is combined well, turn the mixer on high and mix for about 10-15 minutes. The mixture should become a stiff and fluffy marshmallow cream.

  • Add vanilla extract and mix until thoroughly combined. (About 1 minute)

  • Pour the marshmallows into the greased baking dish and smooth out evenly. Wet fingers or a greased spatula work well for this.

  • Let them rest on the counter for about 4 hours.

  • Flip the marshmallows onto a cutting board and cut into squares. I use a sharp well oiled knife for this. An oiled pizza cutter would also work well.

  • Store in airtight container on the counter. Enjoy!
